5′ molten chocolate mug cake

Because some nights only a molten chocolate cake will do, and you don’t want to spend an hour in the kitchen or bake 30 muffins at a time -> mug cake to the rescue! Also comes really handy when you have an impromptu visit from friends and want to whip up a good dessert or snack in no time. This recipe is done in 5′ tops and is super easy to make with ingredients you always have on hand. Here’s my go-to recipe for two mug cakes (or a big one), an intense chocolate-peanut butter version with ingredients I always have at home, but feel free to adapt it with your favorite ingredients or what you find in your fridge.

Makes two mug cakes:

  • ½ cup (90gr) semi-sweet or dark chocolate chips
  • ¼ cup (60ml) milk of your choice (I usually use plant-based milk)
  • 2 tbsp smooth peanut butter (or ‘classic’ butter, almond butter, coconut oil,… )
  • 1 to 2 tbsp agave nectar (or sugar, brown sugar, maple syrup, honey,…) depending on your taste and the sweetness level of the chocolate you’re using
  • 1 pinch salt
  • 1 egg
  • 3 tbsp flour of your choice or 2 tbsp coconut flour
  • <optional> toppings of your choice, such as pieces of of nuts, hazelnuts, shredded coconut, ice cream…

Make the batter in one of the mugs if it’s large enough, or in a microwave proof bowl. Combine chocolate chips, milk and butter of choice in the bowl and heat in the microwave for about 30″ or a tiny bit more if chocolate isn’t completely melted. Mix in a smooth batter, than add in the sweetener of your choice, the pinch of salt, the egg and then the flour, while mixing well. Divide batter into two mugs (no need to grease them) or leave in one single bowl if you’d rather have a larger cake to share. Bake in the microwave on high for about 90″ but stopping first after 60″ to check the consistency as every microwave is different and so are everyone’s taste. If not baked enough, bake for another 30″ or so, until you get the desired cooking level.

Devour by the spoon, still warm and in the mug or after unmolding it on a plate. You can also serve with your favorite toppings.
