Healthy chewy banana chocolate chip cookies

Because apparently, old bananas forgotten at the bottom of your race-day backpack seems to turn into a habit at home (and also because we love love love cookies), here’s another recipe that allows you to use them ripe bananas for something good. On top of that, these cookies are made without butter or other shortening, and require only very little sugar. They make a great pre- or post-workout snack!

Makes about 15 cookies:

  • 2 ripe bananas
  • 1 egg, yolk and white separated and white beaten until stiff
  • One tsp of vanilla extract
  • ¼ to ⅓ (50 to 70gr) regular sugar or the sweetener of your choice (adapt quantity following the sweetener you choose)
  • 2 cups (240gr) flour, or a mix of flour and ground oats
  • 1 tsp baking powder
  • ¾ cup (130gr) dark chocolate chips (make sure they are dairy-free if needed)

Preheat the oven to 350°F (180°C). Peel and mash the bananas (you can use a food processor) into a puree texture. Blend in the egg yolk, vanilla extract, sugar, flour, and baking powder. Gently incorporate the egg white to the mixture, and then the chocolate chips. Drop by large spoonfuls on a greased pan, and bake for about 10′-15′ in the preheated oven.
