Chewy chocolate chip oatmeal cookies

Here’s an easy and yummy recipe of chewy chocolate chips cookies that can be fun to make with (or for) kids. Tried and tested by the big child I have at home 🙂 You can easily double the quantity and share with everyone at work or at school -and become the hero of the day.

Makes about 15 cookies:

  • 2/5 cup (80gr) granulated sugar
  • 2/5 cup (80gr) brown sugar
  • Vanilla extract
  • ½ cup (120gr) butter
  • 1 egg
  • 1 ÂĽ cup (150gr) flour
  • 1 tbsp baking powder
  • 1 cup (80-90gr) rolled oats
  • 1 pinch of salt
  • â…” to Âľ cup (125gr) dark chocolate chips

In a bowl, combine sugars. Melt butter, pour on sugars and mix. Add vanilla extract and eggs, mix well. In a large bowl, combine flour, baking powder, oats, salt, and chocolate chips. Pour the butter, egg and sugar mixture on the dry ingredients, mix (no need to mix for too long). Put dough in the fridge for about 1h.

Preheat oven to 180°C/360°F. Make balls of dough with a table spoon, and place them on greased cookie sheets. Slightly flatten each cookie with a spoon. Bake 10-15′. Cool (or eat still hot from the oven).

This recipe can be customized by adding your choice of nuts, chocolate or dried fruits. Let me know how your version turns out!
