Super Easy Mini Coconut Chocolate Chip Cakes
Here I am, back in Belgium for a few weeks, and it feels so good being able to spend some time with my amazing family! Yesterday, I spent the afternoon with two cuties (my sister’s baby boy and my brother’s daughter) and together we baked these yummy coconut and chocolate chip mini cakes. The recipe is adapted from one I found in my favorite book as a kid (of course my favorite book was about baking!). I think I’ve done this recipe about a billion times in the past and it is a hit every time! It is extremely easy and fun to make, which makes it the best recipe to do with kids. We had such a good time baking (and eating!) these mini cakes together!
Makes 12 mini cakes (size of a muffin):
- 1 cup (120gr) flour
- 1 tbsp baking powder
- 1/2 cup (100gr) granulated sugar
- 7/8 stick (100gr) butter, melted
- 2 eggs
- 3/4 to 1 cup (50gr) grated coconut (really fine)
- 3/5 cup (100gr) mini chocolate chips (or raisins)
In a large bowl, combine flour, baking powder and sugar. Add the melted butter and mix with a spatula, then mix in the eggs to get a smooth batter. Stir in the chocolate chips and grated coconut. Pour batter in 12 paper baking cups and put paper cups in a muffin pan. Bake 20′ in the preheated oven (355°F/180°C), until golden brown. Enjoy plain or with some chocolate frosting for example. So simple and really delicious!
