Cod, spinach and bell pepper curry

This recipe is full of flavor, very healthy, and everybody likes it! I made it for the first time over a year ago. I was driving home from work, and as the hungry foodie I am, I was listening to my favorite cooking show on the radio. I was just trying to figure out what I was going to cook for dinner, when they started describing this cod curry and it sounded really good. I had nothing with me to write down the ingredients and instructions, so I kind of improvised with what I could remember, and it turned out pretty tasty. Since then, I have made this recipe over a billion times, often when having people over, and every time people really liked it (or maybe my guests are simply very polite people ;-)). Here is my version of this curry. I always serve it with couscous semolina, but you can also have it with rice or naan bread as a side.

Makes 4 servings

  • 2 garlic cloves
  • 1 small yellow onion
  • 2 bell peppers (I often use the green and orange ones)
  • 14oz to 1lb (400gr) cod fillet or loin
  • 1 large bag (about 250gr) fresh spinach
  • ¾ to 1 can (300 to 400ml) coconut milk
  • Spices : curry powder, paprika, red curry paste (optional), salt, and other spices of your choice (oregano, ginger, turmeric,…)
  • Couscous, rice or naan bread, as a side

With a very sharp knife, cut the cod in pieces (about 1 inch sides). Pour some spices over the cod pieces, and toss everything together, making sure the cod pieces are covered with spices. Set aside. Peel and chop the onion and garlic, and dice the bell peppers in small cubes. In a large frying pan or a wok, sauté the onion and garlic with a little bit of oil. Add the bell pepper cubes, and allow to cook for a few minutes, then add some spices and red curry paste to it. Place the cod pieces over the veggies in the pan, cover, and let cook for a few minutes. Pour the coconut milk, and once it starts simmering, add the spinach leaves over the cod. Cover again for a few more minutes until spinach is cooked. Toss gently, so you don’t “flake” the cod pieces too much, and serve with the side of your choice. Bon appétit!
