Salmon Tacos with rucola dressing
Yayyy to « Taco Thursdays »! Here is a fun and fresh variation to classic tacos, that is easy to prepare in large quantities for when you have a whole bunch of friends over, or simply for a normal night when you have a starving husband to feed 😉 Also, it was a good opportunity for me to try out my brand new camera and shoot these babies 🙂
For the rucola dressing:
Combine all the following ingredients:
- 3 tbsp mayonnaise
- 3 tbsp plain yogurt (fat-free if you want)
- Juice of ½ lemon
- About 1 cup of rucola, chopped
- Salt, pepper, herbes de Provence seasoning
For the tacos:
- Roma or cherry tomatoes
- Cucumber
- White onion or scallions
- Rucola
- Fresh salmon (about ¼ to ⅓ lb per person)
- Soft taco tortillas
- Lemon wedges, for garnish
Cook salmon on both sides in a skillet over medium high heat, take the skin off, and coarsely flake salmon. Dice the cucumber and tomatoes, and chop the onions.
Heat up tortillas as instructed, and assemble tacos by layering all ingredients and the dressing in the tortillas. Serve with a lemon wedge. Simple and yummy!
