Easy homemade pie crust
I used to always get store bought pie dough back in Belgium, but couldn’t quite find the equivalent here in grocery stores. I then started to experiment and learned how to make it myself, only to find out that homemade pie crust is not only really easy to make, but it is also so much better and crispier than the one you buy ready to use. No reasons not to try it then! This crust is perfect for quiches, pies, or my recipe of the “flat pizza-pie”. If you want to use it with a sweet filling such as fruits for example, you can add ¼ cup sugar to the dough.
For one large pie crust:
- 2 cups (250gr) flour
- A little over ½ cup (125gr) butter, cut into small pieces
- 1 egg (or only the yolk, but I use the whole egg)
- 1 pinch of salt
- Water
Mix the butter, flour and pinch of salt together using your fingers. In a bowl, slightly beat the egg with one tablespoon water, then add it to the other ingredients while mixing. If needed, add a little bit of water so the dough will hold together: it must not be sticky, nor crumbly. Cool for 30’ in the fridge or use it directly. With a rolling pin (use your hands or a bottle if you don’t have any), flatten the dough into a disc (approximately 3-4mm thick). Place dough in a greased pie pan or lay it flat on a baking pan. Top your pie with ingredients of your choice. Bake in the preheated oven (200°-210°C/390-410°F) for 15-20’ depending on the size of your pie and the toppings.
